CARDAMOM APPLE TART
Cardamom makes a change to cinnamon and complements the apple flavour.
Serve 4
You will need:
115g plain flour
50g butter
15g sugar (additional sugar/honey to taste)
25g hazelnuts, ground
700g cooking apples, peeled, cored & chopped
6 cardamom pods
1 egg yolk
1 dessert apple, quartered, cored & sliced
1 tbsp lemon juice
- Rub butter into the flour to form fine breadcrumbs. Stir in sugar and nuts . Sprinkle in 3-4 ts of water. Mix to form a soft dough. Knead lightly on a floured board , wrap in cling film and chill for 30mins.
- Put apples in a pan with 2tbsp of water.lightly bruise cardamom pods and add to pan . Cook over a medium heat, stirring occasionally until the apples are soft. Sweeten with sugar/honey to taste, then cool. Remove cardamom pods. Pur’ee then stir in egg yolk.
- Roll pastry and use to line an 18cm fluted, loosed –bottomed tart tin. Spoon in the pur’ee and level surface. Toss apple slices in lemon juice and arrange on top of tart . Bake for 30mins in a moderate oven. Remove from tin and allow to cool. Serve warm with cream.
