Overcooking the broccoli slightly and mashing it with the back of a folk gives this dish that flecked pesto look.
Serve 4
You will need:
1 red chilli, finely chopped
2 cloves garlic , finely sliced
150ml olive oil
350g spaghetti or other pasta shapes
3tbsp pine nuts, toasted
Salt and freshly ground black pepper.
- Put chilli, garlic and oil in a small pan and season .Place over a very low heat. Break broccoli into florets , cut off stems slice thinly. Cook in boiling salted water for 7-9 mins. Cook pasta according to instructions.
- 2. Drain broccoli and lightly mash florets with a folk . Drain pasta and mix with broccoli. Pour over the chilli mixture and pine nuts and toss well. Serve immediately.
