Hot Sardine Rolls

You need:

Two 3 1/4-ounce can sardines
1 1/2 teaspoons lemon juice
1/2 teaspoon minced onion
1/2 teaspoon prepared horseradish
10 thin slices of very fresh white bread
1/4 cup melted butter


Drain sardines, reserving 1 teaspoon of the oil. Mash fish and add reserved oil, the lemon juice, onion and horseradish. Mix well. Trim crusts from bread and spread with sardine mixture. Roll each slice, jelly-roll fashion, and fasten at both ends with wooden food picks. Brush rolls with melted butter, then cut into halves. Place in a shallow pan and bake in a moderately hot oven (400 degrees F) for 10 minutes, or until lightly browned.
